Before we hit the slope for some fun-filled sledding, I took--
1 cup of leftover roasted cubed potatoes and onions
sautéed them with a tsp of butter
2 tbsp shredded cheddar cheese
1 egg in the center
Cover with a lid on medium heat to cook the egg white.
Season with a dash of sea salt & pepper!
