Xo j 💚 Today, Cecilia & I went shopping at Michaels for glass jars and containers for the salt project. We stopped by the grocery store and picked up a few ingredients & made cilantro chili lime (with paprika, chives & cayenne pepper) salt....
It’s so flavorful. Over the next few months, I’ll work on re-opening my Etsy & Pinterest accounts. Hopefully, by Spring, I’ll be able to join the local farmer’s markets & see what happens. For now.... Xo j 💚 Some would agree with the thought that simple is better. When it comes to cooking, it is best to use fewer ingredients to highlight the protein. I agree. When you season and cook a protein perfectly, it doesn’t take much to “dress it up”.
For instance, I took leftover crockpot curry pork and simply reheated it and placed it in a scorched tortilla with fresh cilantro. I love cilantro but don’t care for the “soap” flavor that it tends to have. (And now, if you haven’t thought of it, you will the next time you use it.)...sorry! I still love it though. Try this: Season the cilantro with a pinch of salt, pepper, garlic & paprika. Add a drizzle of olive oil & lemon balsamic vinegar. Top the meat with a bunch of cilantro and off you go. Delicious eats can be simple. Like life, keep it simple! Xo j 💚 With 15 pounds down (YES! I’ve got 15 to go and then I’ll probably negotiate another 10 or 15...yeah, it got that bad!😣) and really taking the control back in my world, I’ve taken a few days off from my job (in between starting a new position -pre-op nursing-). Although there’s a crockpot full of goodness at home, it’s mom’s day out. With a little time to kill, after being Miss Molly Maid and deep cleaning today, I grabbed a bite to eat at Panda 🐼 Express...a little orange 🍊 chicken 🐓 over veggies & a soda splurge. I’m always on, what feels like, a “train” schedule and I don’t breathe. Even a massage therapist asked me if I relax. In return, I asked: “What does that mean?” Life shouldn’t be a constant stress but, unfortunately for some, it is.....and I only mention the peripheral things. Good grief! I digress.....
Then, I’m headed upstairs for a new hair design. I’m ready to cut the hair that’s weighted me down as well. Everyone needs a fresh start. Today’s my day for that. Do you find that your weekly menu is stuck in a boring rut? It happens to the best of us. Well, shake things up a bit. Step out of your comfort zone or twist your “usual” recipe into something new and exciting. I do like most (or at least I think I do) and open cupboards and refrigerator doors and stare until I’m inspired or become too cold from the freezer air and have to close the doors lol😂 No, but seriously, I like to buy different spices and then work around them with multiple protein choices and sides. So, today, I opened my spice cabinet and saw a bottle of dried lemongrass coconut curry spice mix. I’m going to cut 2 pork loins into cubes, season them with the dried powder and dust them with rice flour. Then I’ll quickly sear them and place in my crockpot on high until fork tender. I love green veggies but my kids are 50/50 these days. I’ll make a pot of rice and chop up cilantro to mix in....and there’s dinner. Also, you can use the juices from the crockpot to make a sauce (or not). You can’t go wrong if your base flavors tase good to YOU. I’m serious. It’s really that simple. Now, if you overcook or undercook your protein, that’s on you 😆 Have a Happy Thursday! **I’ve been told that I’m socially awkward and that’s probably true. It’s hard for me to verbalize what’s swirling around in my brain (sometimes). But, here, I do hope I’m able to properly translate my message.
