Whip 6 eggs & 1/2 cup of half & half mixture aka the “custard” as I called it to get Soph to try it. (... & she loved it!) add 1 cup of egg nog & 1 tsp vanilla extract & a dash of cinnamon (~2 tsp) & 3/4 brown sugar. Mix and add to the 6 cubed sourdough rolls.
Spoon into the mini cupcake holders. Spoon the extra custard over them evenly. Bake 20 minutes 350F (covered with foil for 15 & uncover to scroll the tops) Mix 3 tbsp if butter, 1/2 cup maple syrup, 1 tsp cinnamon & 1/2 cup brown sugar. Melt & mix & dip the minis or drizzle over the minis. No matter how you do it, it’ll be heavenly in your mouth. Happiness is..... Xo j 🥰 I had no idea what I was going to make for brunch tomorrow. It has to be pre-made. It has to be out of refrigeration for a few hours. I thought all day about it. Then it hit me. Use my cupcake holders to make sausage, cheese, onion, spinach & last sourdough egg bakes & mini French toast custard bakes.
I’m not too tired to post my recipe. I pulled from the fridge & started chopping, cutting, sautéing, mixing, stirring & before you know it, with the help of my littles, we were done. I eyeball most of my cooking and taste as I go. It’s a must (and the reason I’m not -and never will be- a twig). I have accepted it.....well, NOT quite yet. 😬 At any rate ....I used: 6 cubed “take & bake” sourdough rolls for each recipe 12 eggs whipped with 1 cup of half & half (3/4 used for the savory recipe and the rest for the sweet) 1 white onion sliced & diced (season with a tsp of black pepper and 1 tsp of salt) 1 package of cheese brats (the Johnsonville ones that look like hot dogs) 3 cups of fresh spinach 1/3 cup olive oil Sauté the onions, add the meat & at the very end toss the spinach in top to wilt. pour over cubes bread and mix. Nonstick spray ray the muffin tins and fill with mix and ladle in the egg mixture. Cover with foul foil and bake 350F/15 minutes & uncover for 5-10 minutes until the tops are golden. Add shredded cheese. Serve with hot sauce & sour cream & chives. Happy End of 2018! Thank Goodness It’s Over With... With the leftovers, I decided to make scones. But after thinking about it, I knew their would be too much liquid for the recipe, so I made a u-turn and went down pancake street! Step 1: Make your desired pancake mix Step 2: fold in 1.5 cups of cranberries Step3: Cook stovetop & transfer to a preheated 350F oven and continue baking for 5-10 minutes Step 4: Dust with confectioner sugar & cinnamon syrup Step 5: MANGIA!!!!!!!!! 3 boxes of Jiffy cornbread Step 1: Apply nonstick cooking spray to your (rectangular) crockpot Step 2: Pour in crushed pineapple with liquid Step 3: prepare the jiffy boxes according to directions and pour over pineapple Cook on low heat for 2.5 hours or until center is fully cooked (use the toothpick test). If you aren’t like me & don’t particularly enjoy spending hours in your kitchen, find as many dinner shortcuts as possible. I like preparing my mashed potatoes ahead of time & keep them warm in my crockpot on low heat. Just coat the pot with non-stick cooking spray & 1/2 stick of butter. Cover the potatoes & serve when ready. Add warm cream or stock, if needed, just before serving. Bake sweet potatoes for 1 hr / 350F & top with brown sugar, butter & stewed cranberry. (Stew 6 cups of fresh cranberries with 1 cup OJ, 1 cup granulated sugar, 1 tsp vanilla extract, 1 pear halved). There are plenty more hacks out there.... Keep it simple. Enjoy your cup of coffee & breakfast. Savor the gift giving. Be grateful for the love in your heart. From my kitchen to yours. Merry Christmas🥰 Inspired by a social media clip of an Italian meatball & marinara roll bake, I decided to twist it aka use what I have on hand. So, that’s what I did. It’s simple & takes under 30 minutes from prep to completion.
Step 1: core each roll (about a tbsp) & save the bread. Step 2: make 25-30 meatballs (using 2 lbs of sausage) (season the meat first with 1 tbsp taco seasoning & a shake2 of garlic powder & a shake2 of red pepper flakes) & the reserved bread crumbles Step 3: sauté the meatballs (20 minutes or until grey on the inside) Step 4: 350F preheated oven - place the rolls on an aluminum foil lined baking sheet. Season with a pinch of taco seasoning & a tps of cheddar cheese. Bake uncovered for 5 minutes & remove & place on the counter (leaving the oven on). Step 5: add the meatballs to each roll & cover with ~2 cups of cheddar cheese & bake until bubbly. Step 6: in your food processor- 1 container of grape tomatoes, 1/3 cup of chopped white onions, 1 tsp of cilantro paste, a shake2 of garlic powder, 1/2 tsp dry mix taco seasoning & a shake2 of dried parsley. Add red pepper flakes if you like it zesty. Pulse 3x. Plate & Serve with a dollop of the fresh made salsa over top. Try something new today. Xo j 🥰 |
