Anyway, she asked me to make my spicy fried chicken this weekend. Between bowling and sporting activities yesterday, it had to be today. My chicken is quick fried in peanut oil and then baked to perfection.
I mix flour, seasoned bread crumbs & tempura dry mix with garlic powder, onion powder, red pepper flakes, sriracha sea salt & black pepper. I eyeball it every time.
Rinse chicken breasts & cut them into 3 strips
Dredge the wet chicken in the dry mix & set aside.
Preheat fry pan with peanut oil to 350F or until a sprinkle of the dry mix bubbles from the heat.
Preheat the oven to 350F.
Fry each strip for 4 minutes on each side and then place in a roasting pan & pop in the oven.
KEY POINT: SALT THE CHICKEN WHEN YOU TAKE IT OUT OF THE FRY PAN... it’s called “seasoning” it & it only works when done straight out of the heat.
I cut a cheese bagel in half and spread cream cheese on both sides and drizzled buffalo wing sauce on top m, followed by layering three chicken strips/nuggets overtop & pawned it off to the now 6 foot tall twin, Sebastian!
