I saw this on an episode of My Grandmother's Ravioli & said: "I can DO that!!" And, I just did.
You will need:
1 roll of thawed phyllo dough
1 bunt pan
1 stick of butter
1 1/2 bricks of feta cheese crumbled
2 large containers of fresh spinach
1 large shallot
2 garlic cloves
2 sprigs of oregano
1 tbsp fresh cracked pepper
1/2 tsp salt
In a stock pot: wilt the two bins of spinach with salt, pepper & a drizzle of olive oil. Take out and drain off excess moisture.
To the stock pot add slivered garlic and shallots & sautee until caramelized.
Melt butter & brush your bunt pan with it.
Layer the phyllo sheets all around the pan.
Mix crumbled feta to cooled spinach and fill the pan. Add shallots on the top and fold the edges into the pan and brush the remaining butter on top.
Bake in a preheated over 350F/25-30 min or until lightly golden.
Take out & let rest.
Flip on a dish & dive in!!!
