You will need:
4 portobello mushroom caps (cleaned, de-gilled with a tbsp & cut in 1/2 in thick strips) or buy the pre-cut/packaged ones ;)
2 cups fresh spinach
1 tsp butter
1 tbsp olive oil
1 tsp steak seasoning
1/2 tsp truffle salt
8 slices of sourdough rye bread
4 slices of Swiss cheese
4 slices of Munster
8 tbsp mascarpone (1 tbsp per slice)
Step 1: sautee mushrooms with steak seasoning and truffle salt) then, set aside in a bowl.
Step 2: sautee spinach in the mushroom dripping with a splash of olive oil. (Set aside in a bowl)
Step 3: assemble the sandwich with mascarpone on both slices, then a layer of Swiss on one slice & Munster on the other. Add the mushrooms & spinach. Grill the sandwich with a tsp of butter until there's a golden crust & cheeses are melted.
Enjoy with a dollop of creamy horseradish!
