Today started off a bit startling with the news of an old friend dying. Catching up with old friends from nursing school ...20 years ago...was wonderful (despite the circumstances of our conversation). I had a sick kid yesterday & had to call out from work today...which meant cleaning, doing laundry, etc.
With all of the quiet, that I’m not used to, I took a break to watch a movie....turned out to be a sentimental flick and didn’t add to the somber cloud hovering over me today. I decided to grab some spicy sausages and make sautéed peppers, onions & garlic, pesto & Alfredo sauce over bowtie pasta. I don’t use my grandma’s bowl too often but every once in s while, I’ve gotta pull her out. With all of the craziness in the world, and the realization that tomorrow may not come for some, keep some perspective, keep it simple & keep those you love a little closer to you! Xo j 💚 Recipe: 2 sliced & sautéed peppers 1 sliced & sautéed white onion Season with a dash of dry red pepper, garlic, salt, pepper, Italian seasoning, oregano & basil 6 spicy broiled sausages 12 oz of Alfredo sauce 2 lbs bowtie pasta (boiled for 10 minutes & drained) pesto: 1 cup olive oil, 1 package of basil leaves, 1 tbsp garlic paste, chili paste, basil paste, 1 tsp salt, dry oregano, basil & a dash of red pepper flakes. 1 large roll of fresh mozzarella cheese diced Pour pasta over the onions & peppers, add the rest of the ingredients & mix well. Serves 8-10 Enjoy! Wings are a staple in this house & easy to make. I decided to sprinkle these chicks with my Jerk Seasoning Salt and roast them 450F for 40 minutes.🐥

They don’t pay me to advertise for them😉 & they were great! It was SO beautiful this morning and ALL day! I was productive and wanted to share these two pics. The fall colors are gorgeous & the sunrise was spectacular. I cherish seeing the sun as my work days start between 5:30 & 6 am.

Mix together a fudge cake mix (as if you were just making a cake) Take cooking spray and coat the bottom of a rectangular crockpot Pour batter in... Smash 6 bananas & mix with 1 cup of heath chips ...pour over the cake Take another dry fudge cake mix and pour over bananas. Cut 1 stick of butter and place over dry mix. 1/2 cup mini morsel chocolate chips: spread evenly over the butter. Cook on high heat until the dry mix is incorporated into the butter and “puffs” up. (About 2-3 hrs max) Serve with a heath Klondike bar, top with bananas & caramel ...& voila. Happy Sunday! Xo j 💛 PS—a pumpkin & spice cake mix is also wonderful at this time of year. A friend asked me the other day: “What would you serve on your food truck?” As I most often answer, “Idk”...but the truth is, I cook what inspires me. Today, I wanted to kick up my pulled pork. I thought of making naan pizzas. So I did. The key to lightening up what sounds like a heavy meal item is to use a fresh tomato, onion & cilantro salad on top of the melted cheese & meat.
Ingredients: Cooked pulled pork 1/2 cup chopped 1/3 cup jalapeño jack cheese 2 tbsp bbq sauce (my recipe is simple) 1/2 fresh avocado 2 tbsp of the tomato salad (1/2 cup halved grape tomatoes & 1 tbsp white onions & 1 tbsp diced jalapeños & 4 chopped sprigs of cilantro with a sprinkle of lime juice & a drizzle olive oil & a Shake Shake of sea salt) 1/2 cup of sautéed onions, garlic & peppers Directions: Preheat oven 425F Line a baking sheet with non-stick aluminum foil Place naan on foil with meat & cheese & veggies Bake for 5 minutes or until the cheese is melted Remove and top with tomatoes & avocado & bbq sauce🤤 Juli’s BBQ sauce: 2 cups ketchup 3 tbsp sweet & spicy mustard 2 tbsp peppercorn mustard (use what you have: yellow or Dijon will work too) 1 tsp lime juice 1 tsp Savage Jerky Reaper hot sauce (it’ll knock your socks off)...use what you have on hand 3 tbsp Worcestershire sauce 1 tbsp garlic paste 3 tbsp water to thin it out Heat on low for 10 minutes (if it’s too sweet or spicy, adjust your flavors: more ketchup if it’s too spicy and so on. If it’s too spicy, sometimes I’ll add honey to temper the heat. Call me if you need further explanation 😂 Play with flavors & ideas. 1/3 tbsp cocktail sauce 1/3 tbsp horseradish sauce 1/3 cup miracle whip Pour into a squeeze bottle, shake well and squeeze over your crab cakes and voila!🦀 Xo j ❤️ Ok, I just haven’t had time to post the recipe for this....
Stove top ricotta spinach and ground beef cheesy dip! In a non-stick fry pan 1 package of raw spinach 2 tbsp butter 1 tbsp garlic paste Sautee until spinach is wilted Add 1.5 cups of ricotta 1 cup of mozzarella cheese 1 cup seasoned sautéed ground beef 1 tsp of Black Pepper A dash salt (if needed) Mix until “cheesy melty goodness” ... Pour into a casserole dish and pop into a broiler until golden. Serve with tortilla chips💛 Xo j The key to stuffed shells is the ricotta mix. 1.5 cups of whole milk ricotta 1 tbsp of garlic paste 1 egg 1 cup of low moisture mozzarella cheese 1 tsp black pepper 1 tsp of my roasted garlic shiitake salt (well🤷🏼♀️) Mix well & pipe desired amount into cooked pasta shells. Bake 350F/20 minute or until cheese is melted. I browned ground beef and layered that in between the shells. Happy Thursday! Xo j 💚 Just discovered a new coffee shop down the street. The employee said that it’s a place of respite, created by the owners, who were military members. The idea is that, if you’re in the military, police force, medical field, etc, they know those jobs can/do burden folks (I agree); so, they wanted to create a calm environment to get a bite to eat & a cup of coffee, leaving one’s troubles at the door. I love that. Too many people carry burdens and have no outlet (not even 5 minutes to relax & regroup). Here, it was a relaxing warm environment & I’ll be back. Exercise & Coffee!
