I think I must have walked around my whole life with a sign plastered on my forehead that read: “Please, throw cheap shots at me. Soph’s bday is tomorrow! The big 9! Time has flown. It feels like just yesterday I was bragging to a sweet friend about my ‘lil people and how my littlest was not even 2 years old. We’ve lived and we’ve learned & all have grown up...and not half bad. This week has been one long celebration for her. She’s a dear sweet angel with a huge heart and a kind, loving soul. She lights up the room when she enters and fills my heart with so much joy! I’m grateful to have her. I told her a long time ago that she was the angel God knew I needed. She doesn’t understand but I’m sure someday she will. So HAPPY BIRTHDAY SOPHIA ALEXANDRA! You’re one of a kind!

We celebrated Soph’s 9th bday a little early. Yes, my baby is 9! Feels like just yesterday that she was just a tot! I cooked a ton of food and it was delicious and fun. Dad and Mom took turns walking crazy Stanley 🐶 and catching up on the happenings with the boys and girls! I was off yesterday and had a fun day shopping with Mom and Dad. We stopped by the Kabob House for a quick bite. I love their authentic Afghanistan flavors.
I tried something new and want to share it. Mom said she’s going to make my cheesy potato recipe....so, it might be helpful to post directions. Juli’s Cheesy Potatoes: 2 large bags of potatoes O’Brien 1 jar of your favorite Alfredo sauce 1.5 sticks of melted butter 1.5 lbs of shredded cheddar cheese. .5 cup milk Mix thoroughly and pour into a non-stick spayed roasting pan. Cover with aluminum foil & bake. In a 400F preheated oven, bake it for 30 minutes, uncover & stir. Continue baking for another 30 minutes. Uncover and let the top crisp for the last 5-10 minutes (or broil until crisp). At any rate, it’s different because it’s NOT the POPULAR oily or over buttery cheesy potato recipe that is popular. I watched a segment of the Rachel Ray show about spaghetti squash & it looked super easy to make. Just whip up a batch of basil pesto and bake a squash for an hour (300F). You can follow her recipe or any other one, for that matter.
The takeaway for me was this: She said: “When you cut your squash, cut it in half (horizontally) not vertically. The REASON: after you take the seeds out with a spoon, use a fork and in a circular direction, shred the squash out in long pieces because it grows in a circular direction. I knowwwww....right? Who knew?!?!? When it’s hot, pour your pesto over and add Parmesan cheese. Serve warm. Half of my bunch loved it. I’m always up for trying a carb alternative; but, remember, it’s a white/yellow vegetable. They have the higher carb rate versus the dark green veggies. Try something new! Yes, I’m passionate about food, salts, seasoning and cooking; but, I’ll always be a nurse. Today, I used my instincts that I’ve learned & earned over the years. The littlest started gasping and violently choking on her dinner. When everyone else thought it to be a no big deal, I flew off of the couch & into the kitchen. I asked her if she was choking on a taco shell piece (it seemed to be the most logical thing) & she nodded yes. (REMEMBER TO ALWAYS ASK WHAT THE PROBLEM IS IF THE PERSON IS CONSCIOUS—it will help you know how to help them!!!) Immediately, I brought her to the garbage can and forcefully slapping her upper back until she expelled the two lodged pieces. I say this because, when a situation like this presents itself, a child can choke and quickly lose consciousness if we do not react FAST! I believe every adult should obtain Basic Life Support certification and every teen needs to have it as well. There are easy-to-complete online programs and most American Heart Association affiliates can be found close by. She was scared and I’m grateful it wasn’t worse. My struggle is my love of food & having to run 5 miles to maintain ...not even lose a pound. Ugh.
