I've always wanted to make paella but have yet to until today!
It's a very time consuming process but fun!
Last month, I had purchased paella rice (yes it has 4x the starch content than regular white rice) and saffron from Amazon...they have been sitting on my counter, just waiting patiently to be used😂
2 cups cubed smoked cajun sausage
1.5lbs shrimp (16/20)
1/2 lb squid tubes
1.5 lbs mussels
(Squeeze 1 lemon & season fish with 2 tbsp of Ethiopian dry spice mix or a mix of cayenne powder, garlic, smoked paprika)
Carrots (fresh diced 3/4 cup)
Peas (frozen 1 cup)
Roasted: tomatoes, garlic, onions, sweet peppers and jalapeños (1 cup tomatoes & 1 cup peppers, 1 jalapeño, 1 quartered white onion & 1 whole garlic stalk w/ top cut off, exposing the open fresh garlic)
Similarly to making risotto, pour 3 (32oz) cartons of vegetable stock into a very large non-stick fry pan. Bring to a boil (medium high heat) and add 4 cups of paella rice and continuously stir with a wooden spoon.
At the 10 min: add carrots. Keep stirring.
At the 14 min: add frozen peas.
At 20 min: roasted veggies.
And at 25 min: add seafood and cover with foil until shrimp turns pink ~5min (low heat).😋
Add chopped cilantro and scallions and a squeeze of a lemon.. Taste and season with salt, pepper & garlic powder. 🍴
