Well, it was pasta or rice and I’m out of protein. I opened the pantry and started pulling cans out and (2 bags) flour tortillas and rice. I thought: “Well, I can flash fry the tortillas and layer them with rice, beans, corn and tomatoes.” So I did.
Season each tortilla after frying with a garlic (and whatever you want) mix.
I used peanut oil in a shallow fry pan.
In another covered large fly pan, 2 cups of rice, 1 can of black beans (all drained), 1 corn, 2 roasted tomatoes and 4 cups of chicken stock. Simmer on low for 25 minutes (covered).
In a large roasting pan, layer 6 tortillas and rice and Colby jack cheese...and repeat for a total of 3 layers.
Bake 350F until the top layer of cheese is melted.
Serve with sour cream & enjoy!
