FIFTEEN THOUSAND VIEWERS!!! Thank you all so much! What a fun year of cooking it has been! As I embark on conquering 33 credits to complete my bachelor's degree in nursing, I'm struggling with setting aside my passion for cooking & wanting a food truck! While at work yesterday, a patient of mine, who turned out to be a multi-millionaire & restaurateur, offered me the funds for my very own food truck. *Here's the catch, as a professional, I can't (nor couldn't) accept such an offer.* But, for the briefest of moments, my eyes glossed over, I swallowed, overwhelmed & taking in a breath---telling myself: "girl, stop! You need to earn it!" I graciously said: "Thank you!" He was persistent, though......ending with a "I like you & can see that this IS what you desire to do! And, I don't always help people!" (Very kind) Now, hear me when I say that I love caring for the sick! I always have & do the very best that I can do, when I'm at work. I care for them as I would want to be cared for....like that angel with wings, who gently puts their arm over your shoulder & says "everything's going to be alright!" (even if it's not)....and I mastered the art of starting an IV a long time ago....Just want y'all to be be clear on the nursing aspect! ;) Patience has never been my strong suit, though. And, we all know that money....well, there never is enough...EVER! So, enough with that. I'll continue to cook for pure enjoyment & nourishment! And, maybe, someday "Daddy Warbucks" will reappear, when the timing is right! Isn't that crazy?!? I'm going to check out his Bistro, though! Don't stop believing🎶 Xo j 💚 But, these two are MY all time favorites! Lobster Ravioli & Grilled Ribeye with blue cheese & garlic onion crisps....Nom Nom! Xo j💚 #meatlessfridays It looks gourmet ....but oh-so-simple to make! Two pre-made fire roasted thin pizza squares. Spread 2 tbsp mascarpone cheese over squares (instead of marinara). Sautee 2 cups of fresh mushrooms in a non-stick frying pan with a tbsp (each) of olive oil & butter. Sprinkle over top 1/2 tsp of truffle salt, red pepper flakes, oregano & garlic powder. Spread mushrooms over both squares & top with 1 cup of mozzarella cheese, per square, and a dash of oregano. Bake 400F/10 min Garnish with chives, smoked paprika & parmesan shavings! Happy Cooking! Xo j 💚 Renders 6-8 servings (but if you have growth-spurting boys....much less ;) ) So easy but there are a few steps: Lobster Ravioli: In a stock pot: 3 tbsp sea salt, 2 tbsp peppercorns, 1/2 (juiced) lemon, 1 tbsp olive oil & butter. Bring to a boil & add 3 lobster tails. Cook for 2 min, take out & set aside to cool. Once cooled, take your cooking shears & cut the lobsters down the middle & peel away the shell. Dice & season with salt & pepper. Then, set it aside. Ravioli/Pasta Dough: So simple. Follow the link below. For fun, I added red food coloring. I used a circular metal cutter & cut out 50 rounds. http://www.thekitchn.com/how-to-make-fresh-pasta-in-the-food-processor-cooking-lessons-from-the-kitchn-189721 Butter sauce: 1 stick of butter & 5 garlic cloves. 1 tsp fresh cracked pepper & 1 tsp sea salt. Cook until the butter & garlic cloves gently brown. Juice 1/2 lemon. Chiffonade (thinly slice) basil for garnish. To make the ravioli, simply take a round & a diced or 1/2 tsp of lobster & top it with another round that you "egg wash" the edges. (Crack an egg, wisk & "wash" the inside of the top round edge to "glue" them together.) This batch will render 25 ravioli. Bring a stock pot of salted water to a gentle boil. Cook the pasta for 2 minutes. Drain & drizzle browned butter over top with basil & Parmesan cheese. Happy Cooking! Xo j 💚 Kinda.... ;) Boil desired number of halved red skin-(on) potatoes until fork-tender (I used 1 bag of small-medium potatoes) In a sauce pan: - melt 1 stick of butter - 1/2 cup mascarpone cheese - 1 cup shredded cheddar/mozzarella - 1/2 stick cream cheese - 2 tbsp sour cream - 1 tbsp garlic powder - 1 tbsp salt - 1 tsp black pepper Drain potatoes, smash & mix with ingredients from sauce pan. Garnish with a dash of paprika & scallions. Broil your favorite sausage--6 min per side or until nicely seared. Happy Cooking! Xo j So, you're thinking: "Big deal! It's just a boiled egg..." Well, it's how you do it.... In a sauce pan, cover desired amount of eggs with cold water & 1 tsp of salt. The salt prevents your eggs from turning that ugly green color. (fun fact) Boil for 6 min, drain & peel under lukewarm water. Season with fresh cracked black pepper & a pinch of sriracha sea salt. Cut open over a butter toasted English muffin & a side of smoked peppered sriracha bacon! Happy Cooking! Xo j 💚 Turkey Hill ice cream is famous for their Denali Moose Tracks ice cream! Named after a golf course in northern Michigan & can be found from Maine to California. Yummy stuff!! I LOVE that post-grocery-shopping-freshly-melted ice cream, that you can just glide your tablespoon around the edges & indulge! That turn-away people....this is MY moment! Let me just have it!
