With a little of this and a little of that, I decided to throw together a Beef Stroganoff.
Boil yor desired amount of no-yolk noodles in salted boiling water for 9 minutes. Drain and replace in pot. Add 1/4 - 1/2 stick of butter to coat the noodles.
In a non-stick sauté pan, fry 1 lb of desired ground meat. I used 80/20 beef that I had on hand.
Season with:
1 tbsp oregano
1 tbsp garlic powder
1 tsp black pepper
1/2 tsp red pepper flakes
2 tsp sea salt
1 tbsp dried chives
1 cup of sliced mushrooms
Once the meat is browned, drain the fat off & add 2 cups of THAI COCONUT CURRY CHICKEN BROTH (total accident....I've had Curry on the brain and grabbed the wrong box 😂 but it compliments the lemon flavor of the oregano...& it worked!!)
2 tbsp flour (make a "well" in the center of the pan with beef and mushrooms on the perimeter.)
1 tbsp butter to the flour and stock
Stir until you get a sauce consistency (30 seconds...if it's too thick, add more stock).
Turn the heat off and mix in 1/2 cup of plain Greek yogurt! Add the buttered noodles and dust with parmesan cheese & smoked paprika.
It's light and refreshing! And, because of the broth, there's a beautiful citrus balance to the rich sauce.
Substituting lighter ingredients for the usual heavy cream & sour cream, cuts the fat out but not the flavor!
