Snow might still be in the forecast IN SPRING! So, add a little sunshine to your day with a chili lime broiled shrimp & pineapple salad~ with a lime twist. I love just about anything that comes from a martini glass...especially, blue cheese stuffed olives et al! I digress ;) But, food in one?! Well, now, that's just frolicing with your taste buds!
1 pineapple diced, 1/2 lime juiced, 1/4 orange juiced & zested, 1 tbsp garlic paste, 1 tbsp chili paste, 1 tbsp cilantro paste, 1/3 cup olive oil, 1 tsp black pepper, 1 tbsp salt, 1/3 cup chopped red onion.... Serve along side grilled fish or, simply, with tortilla chips. It's fiesta Time! Xo j Felt the awful effects of food poisoning for the better part of two days! Ugh. What to eat when all I want is to slurp some warm soup~that I don't have! Pulled out a box of cherry tomatoes, 1 white onion, I can of Italian seasoned diced tomatoes, 1 tbsp garlic paste, 2 tbsp basil paste, 1 tbsp chili paste. Sautée with 1/2 cup olive oil, 1 tsp pepper, 1 tbsp salt. Food process & return to stock pot & add 2 cups of water (if you want it creamier, add milk or heavy cream). Top with roasted red pepper chips and a little Parmesan cheese. A bowl of comfort! Xo j Step 1: clean by pulling the lower outter layer/tough leaves off. Take a pair of scissors and clip the tops of each remaining "leaf" & cut the top off the artichoke. Open the leaves and drizzle with olive oil, Parmesan cheese, seasoned panko bread crumbs, salt, pepper & garlic powder. One is never supposed to admit error, right?!? Well, I didn't use a go-to recipe. Pulled out this file from the recesses of my brain and tried doing it on the fly. So I baked them 350/70 min/covered w/ tin foil. Not a good choice. Cover and steam them (w/vegetable stock) stovetop/20 min for a perfect tender artichoke. Ciao~ Xo j Trying a few new sauces....hot & spicy! Found a great store, called the Pepper Palace @the National Harbor, Md. Worth a visit for sure! Roll 4 vertically split andouille in 8 flakey pillsbury crescent triangles. Bake 350f/13 min. Top with shredded cheddar cheese and continue baking for another 5-7 min. Enjoy! Xo j |
