I no fan of rye seeds....so, I grabbed a fresh pumpernickel from Wegmans. Yesterday, I covered (with water & 2 seasoning packets) & cooked the corned beef briskets in a slow cooker on the high for 5 hours. Today, I sautéed a thin-sliced large cabbage and one large yellow onion with 1/2 stick butter, 1/3 cup olive oil, 2 tbsp salt, 1 tsp garlic powder & 1 tbsp pepper. Once wilted, set aside & slice the brisket against the grain, using a mandolin. Layer two pieces of the pb with baby Swiss on both sides, sauerkraut & a good portion of meat. I made Russian dressing, using The Food Network link to Zingerman's recipe below. Today, I picked up St. Patty's Day lunch/dinner supplies at Wegmans. While there, Soph & I perused the aisles & snagged some fabulous fresh produce! I LOVE that store & could get lost inexpert aisle, completely intoxicated from the surrounding aromas. Gahhhh! Too much fun. Happy Monday! Xo j Ingredients: 1 large Italian bread loaf 6 eggs 1 cup cream or milk 1 tbsp vanilla extract 1 tsp cinnamon 7 tbsp blueberry cream pie filling 7 tbsp cream cheese 7 tsp confectioner sugar (for dusting) Wisk eggs, milk, vanilla & cinnamon & set aside. Slice off both ends of bread loaf. Cut 1 inch thick slices and, in the middle of each, slice down but not through bread. (Just enough to open and fill) Once all are cut, fill each with a tbsp of cream cheese & blueberry cream filling. Soak in egg mix on each side. Preheat your non stick pan with non stick spray & 1 tbsp of butter. Cook the French toast until golden brown on each side. Dust with powdered sugar & drizzle maple syrup. Happy Cooking! Servings: 7 Xo j 💙 Here's a throwback recipe from 20 years ago that I had at an Italian joint near my parents house in Michigan. In a large skillet, saute 1 tbsp thinly sliced garlic, 2 tbsp thinly sliced red onion & 3 sprigs of thyme, pulled from stems & chopped finely in 2 tbsp butter & 2 tbsp olive oil. Cube 6 boneless skinless chicken breasts & season with a dusting of garlic powder, sea salt & black pepper. Pour a cup of flour over chicken and lightly coat each piece. Add chicken to skillet & cook on high heat until crispy & lightly golden on each side. (About 4 min each side) Add 3/4 cup of basil pesto, 1 cup of alfredo sauce 1/2 cup ricotta cheese & 1/2 cup olive oil. Remove from heat & set aside. Boil 2 lbs of angel hair pasta in salted water for 5 min. Add a large tub of fresh baby spinach for the last min (until wilted). Reserve 3/4 cup of the pasta/spinach water & add to the chicken & sauce. Drain the pasta & spinach & mix with sauce & chicken. Dust with parmesan cheese & serve. Feeds about 10 hungry men or enough for two dinners. Happy Cooking! Xo j 💚 |
