Ingredients:
2 lbs bourbon infused thick cut bacon
3 poblano peppers
1 habanero
2 large garlic cloves
1 cup cream cheese
1 lb shredded cheddar cheese
1 tsp jalapeño powder
1 tsp garlic powder
1 tsp sea salt
1/2 tsp black pepper
1 pinch red pepper flakes
Line a baking sheet with bacon strips and roast until very crisp on either side. Let cool and rough chop 6 strips (set aside) and food process the remaining pieces. Add to a large bowl.
Roast vegetables on a baking sheet with a drizzle if olive oil at 425F/25 min (flip peppers and garlic once). Set aside and let cool. Then, simply peel skin off of poblano pepper and place peppers and garlic in a food processor and rough chop. (Leave the habanero out unless you like the burn🔥) Add to bowl.
Mix softened cream cheese, cheddar cheese together and add all ingredients together.
Place reserved bacon and habanero pepper on top with a sprinkle of scallions.
Hear before serving to melt the cheeses.
Serve with home-fried potato chips.
