2 lbs extra large raw shrimp
2 cups diced potatoes
2 tbsp diced onions
3/4 cup coconut milk
1 large cauliflower head
2 tbsp olive oil
1/2 cup mango coconut pepper sauce
Sauté the onions, potatoes & cauliflower with the olive oil in a large non-stick skillet on high for 10 min. Add the coconut milk, mango sauce & shrimp. Cook until shrimp turn pink.
Sprinkle scallions over top & serve.
