I wasn't going to bake this year, but; there was a little extra pep in my step today and a little sparkle of inspiration...and voila! 3 cups chocolate graham cracker crumbs 3/4 stick melted butter 1 large tube of peppermint sugar cookie (refrigerated) dough 7 chopped white chocolate peppermint Hershey Kisses Firmly press the crumbs (mixed with butter) into a 9x12 Pyrex dish. Spread the room temperature cookie dough evenly over the crust. Bake 25-30 min in a preheated 350F oven or until edges are golden. As soon as you remove it from the oven, spread the chopped chocolate over top. Let cool and cut. Servings: 35 pieces Merry Christmas!! Xo j 💚 Growing up, I remember my older sister lining her plate with her portion of peas. She detested peas😂 Every once in a while, she'd con me into helping her finish them! Well, after seeing so many British style Fish & Chips (with a side of "mushy peas") postings via social media, I decided to try it out. Wow, what a little butter, heavy cream & parmesan cheese will do to transform plain Jane peas into pea perfection! 1/3 cup heavy cream 1/3 stick butter 3 cups of frozen peas Heat peas through with butter & season with your desired amount of pepper, garlic & sea salt. Once thawed & heated through, add cream and mash with a potato masher until smooth. Pour in parmesan and mix together. Servings ~4-6 Happy Cooking! Xo j 💚 It's a balmy 70 on December 12th!! Xo j 💚 So, I had a hankering for seafood cajun links, shrimp & cheesy garlic potatoes today! Cheesy potatoes: 2 packages of your favorite diced potatoes and onion mix (wink wink~ the green bags) 1/2 stick of melted butter 2 cups of cheddar cheese Season to your desired taste with: Sea salt Garlic powder White pepper Chives Red pepper flakes Mix the cheese and potatoes together Drizzle the melted butter into a Pyrex 9x12 Pour potatoes & cheese in Sprinkle the seasoning over top Cover with foil & bake (400F) 30 min, stir potatoes around, and continue baking for 40 more minutes or until potatoes are fork tender. Seafood links are simply pan fried with 2 tbsp butter, 2 tbsp lemon juice & 1 tbsp olive oil...flip when they are golden on one side. Once you flip, add your cleaned and seasoned shrimp & flip after a minute. Now, if you have fish allergies, like my lil Sean, don't buy the links! He took one before I could prevent him and his lips blew up like a blowfish🐠 (pun-intended)! Poor guy! Thankfully, there's no shortage of benedryl here!😷 Happy Friday! Xo j 💚 It's an orange chicken kinda' night!🍊🐓 Cubed chicken breast 3/4 cup panko bread crumbs 1 cup tempura dry mix 1 tbsp red pepper flakes Peanut oil in your preferred fry pan (350F) Flash fry until golden. Pour your desired amount of orange sauce over the chicken & toss until all pieces are thoroughly coated. Sprinkle with sesame seeds and scallions (or fried onions), serving over sticky rice.
