I've been told that my recipes seem too complex. No, I promise, they aren't. Well, it may come from the complexities of my crazy brain. I have these ideas & it's hard to harness them to formulate recipes that the normal brain can follow...hehe.
Stay with me:
Today's inspiration came from a box of fish stock, Japanese udon noodles, vegetables and sesame seed oil....off we go.
2 boxes of fish stock
1 tsp shaved fresh ginger
1/3 cup chopped white onion
1.5 cups sliced fresh mushrooms
1 cup of fresh bean sprouts
2/3 cup water chestnuts
1/2 cup chopped scallions
2 tbls sesame seed oil
1 tbsp garlic paste
1 tbsp lemon grass paste
1 tbsp chili paste
1 tsp red pepper flakes
1 tsp soy sauce
1 tsp black pepper
Bring veggies to a boil after simmering for an hour and add the udon noodles. Cook on high for 8 minutes.
Place desired amount of noodles and veggies in your bowl, sprinkle with red pepper flakes, ladle a cup of broth & finish with a tbsp of chopped scallions!
It's not hard...but, taste & season as you go.
