2 boxes of Jiffy cornbread mix (follow directions)
1 cup cubed cheddar jack cheese
1 diced fresh jalapeño
1 tbsp scallions
1 cup of kernel corn
In a greased ebelskiver, over medium-high heat, spoon in 1 tbsp of cornbread mix. When the edges start bubbling, take a tsp and flip the muffins. Pop the muffin onto a baking sheet and continue to bake in a preheated 350F oven for 10 min.
Drizzle a little honey over top and voila!
