I did something different this year....I bought a ham for starters...and I baked it with 1/2 - 3/4 cup simmered blueberries (with a dash of cinnamon, a juiced and zested lemon and 2 tbsp of sugar) I poured the juice over top for a glaze.
I wanted to switch up the old pineapple ring and cherry routine (which I've never done ...nor will I)...it's like pineapple upside down cake...nope nope nope!👎
And, the other day I bought a fresh pineapple, thinking I'd use it somehow with the ham. So, I thought "chutney" and off we go....😋🍴👍🍍
I diced a fresh pineapple
2-3 tbsp diced red onion
2 diced jalapeños
A drizzle of olive oil
I used the dry seasoning pack that came with the ham (the one you mix in hot water to make the glaze) and poured it over the pineapple mix
2 juiced and zested clementines
1/3 cup honey
Season lightly with a dash of sea salt & pepper
I simmered it for 30 minutes, poured the excess liquid over the ham and tossed it in the food processor for a quick spin.
It was spicy and sweet and paired very well with the glazed ham.
Try something different next time!
