I don’t use recipes....I just do it.
My breading was a simple mix of dry herbs, my seasonings, flour and seasoned egg wash....a quick fry in olive oil & vegetable oil...and then, once golden, bake in a preheated 350F oven in a roasting pan for 20 minutes on a bed a marinara and roasted red peppers, pine nuts & golden raisins. I topped it with grated Parmesan and pepper jack cheeses. I served it over buttered orzo for the monsters and wilted fresh baby spinach for me ...carb swapping because I wanted a crispy crunchy garlicky buttered slice of French bread!
PS...don’t forget to season your pounded fried chicken immediately after taking it out of the fry pan...with my Italian Herb Blend!😉
