It's actually very easy...but multiple steps:
1 large bowl: 4 tubes of sugar cookie dough, 16 oz of ricotta (whole milk), 3 lemons juiced & zested...beat with a mixer until smooth
Another bowl: 3 sleeves of crumbed graham crackers & 1.5 sticks of melted butter. Press crumbs into a sheet pan & set aside.
Sprinkle 3/4 cup white chocolate chips over pressed crumbs. Scoop on the softened dough over top and gently spread evenly across the sheet.
Toast pine nuts for 2 minutes (to release the natural oils)...set aside until after baking.
1/4 cup lemon juice 3/4 cup confectioner sugar...whisk until well incorporated & drizzly!
Bake 350F/22 minutes
Take out when edges are golden. Sprinkle toasted pine nuts over top and drizzle lemon glaze over top.
