I had boneless skinless chicken thighs, coconut milk, a French bread loaf & Lefty's spice mix.
I don't use recipes so try to follow my madness!😂
Use 2 thighs per person, cut each one into 3 pieces
Pour 1 cup of coconut milk over top of cut chicken and mix thoroughly.
Season with a tsp of sea salt, black pepper and garlic powder.
Pour about 3/4 of a cup of Lefty's (or your choice) dry chicken/fish fry over top and mix well.
Let it sit for 20-30 minutes (this will insure you get a good crust).
Preheat (to 350F) a large fry pan with peanut oil about 1-2 inches deep. You'll know it's ready when you sprinkle a little dry mix in and it bubbles immediately (that's if you don't have a thermometer).
Just before you are ready to fry, dredge the soaked chicken in another cup of dry mix; this time, just one piece at a time and shake off the excess mix. When you're ready to fry, have a dozen (at a time) prepared to drop into the oil because they crisp up quickly.
Once golden on each side, place them on a baking sheet with a rack (to let the excess oil drain off) and place into a preheated oven for 15 more minutes.
Cut a large French loaf and scoop out the excess bread in the center, creating a well for your chicken and romaine leaves.
Pour your favorite dressing on each side of the bread. I used a cilantro avocado yogurt dressing. Spread it evenly, place your chicken down and drizzle with Georgia honey bbq sauce. Cut 1 stalk of romaine and place crisp leaves over chicken.
Cut desired sized slices and enjoy. It's simple & delicious...and full of bold flavors!
