Make your chili how you like.....but; add some corn and beans to insert those veggies!
I used leftover shredded grilled jerk chicken breast
8 oz of yellow corn
8 oz of chili beans
Season your meat/chili mix with:
Desired amounts of chili powder
Cayenne pepper
Black pepper
Sea salt
Garlic powder
Ethiopian spice mix (which has a heavy amount of smoked paprika & cayenne)
Cumin
Red pepper flakes
Jalapeño powder
For a change, I roasted a package of cubed seasoned potatoes & onions, drizzled with olive oil, on parchment paper (400F/35 min) & when crispy, I topped the chili with sriracha ranch dressing, potatoes & onions & a sprinkle of cheddar cheese!
*The sriracha ranch gives it such great flavor and a tbsp has less calories than a tbsp of sour cream*👍
