2 12-count non-stick muffin tins drizzled with olive oil in each one.
In a large bowl mix:
3 lbs "meatball mix"
1 cup Italian bread crumbs
2 raw eggs
1 cup chopped roasted sweet peppers & tomato mix (basically--leftover fresh salsa 😉)
2 Idaho potatoes cut into thin rounds. Place 2-3 round on the bottom of tin & sprinkle w/ black pepper & garlic
24 cubes of fresh mozzarella
Form meatloaf balls w/ a cube of mozzarella and place on top of potatoes
1 lb bacon cut in thirds---place 2-3 pieces over top & off you go to the oven!
Preheat oven 400F & cook for 30 min
Food process 1 bunch of basil, 1 tbsp garlic paste & 2 tbsp scallions, 1/3 cup olive oil & 1 tsp lemon juice...spin it up and drizzle over top those juicy muffin tops😃😍💚😋🍴
