Tomatoes- 2 large round
Basil- 1 bunch
fresh mozzarella- 2 blocks
Alfredo sauce- 1 cup
Pesto- 1 cup
chicken breasts- 1 per person
Olive oil- to drizzle
seasoning- sea salt, black pepper, ground oregano to taste
parmesan cheese- 1/2 cup
Cut the chicken breasts like a fan (not all the way through)
In a roasting pan, pour 3 tbsp of Alfredo sauce, 1 tbsp of olive oil and 2 tbsp of pesto--spoon evenly across the bottom
Fill each slit with cheese and every other one with 1/2 of a slice of tomato and a basil leaf
Sprinkle each chicken breast with the seasoning
Place in pan and add an addition sprinkle of Parmesan cheese over top
Cover with tin foil and bake in a preheated 350F over for 25 minutes. I like a crispy crust; so, at the end, I removed the foil & broiled the top for about 4 minutes until the cheese was fully melted & golden.
It's juicy and tender loaded with flavor.
