Quick tip:
When frying tortilla chips, I use my peanut oil for two batches....after the first batch, and once cooled, pour it into a container and seal, preventing moisture.
Tip: if water, even a few drops get into the oil and you try re-heating it, let's just say splatter splatter splatter splatter....it's a no brainer for most...but, I thought: "it'll dissipate with the heat, right?!?" Nope! So, after getting burned in the shoulder and face three times as I was try to wipe the spots on the floor, back splash, stove and counter, a fresh batch of oil was used.
Safety first is better than recycling and burning...
Happy Cooking!

Splash guards are helpful in reducing the clean up from oil pops.👍
