Let It REST...seriously. Grill them on medium high heat 3 minutes and then a half turn for those famous hatch marks...at 6 minutes, flip them and do the same thing. Take them off, place them in a covered bowl. Thinly slice and off you go. The best marinade is simply using a dry rub of your choice. I topped these with freshly spun up garlic, cilantro and tomato and served in between a soft chewy baguette with smoked provolone!
