Do you remember the last time you had an authentic Mexican dish and left wondering: "What was that cheese?" Cotija (pronounced coh-tee-ha) is crumbly & salty. It reminds me of feta cheese, without the wetness. It's delicious over tacos with a little crema or Mexican table cream (a looser version of sour cream). Yesterday, I made pulled chicken tacos topped with beans, crema, Cotija, jalapeños, pico and scallions in a scorched flour tortilla.
