I learned how to make the perfect hard boil egg....sans the discoloration that tends to happen! And, here's how.
Fill a sauce pan with desired amount of eggs. Cover with cold to luke-warm water & 1 tsp salt. With your flame on high, set timer for 10 min, drain & fill with ice water to stop the cooking process.
Peel and chop eggs adding 2-3 tbsp tartar sauce, 1 tbsp Nathan's deli mustard, 1/2 tsp wasabi sauce, 1 tsp chili paste, 1/2 tsp fresh cracked black pepper & a smidgen sriracha sea salt. Dust with smoked paprika & dry parsley.
Scoop a spoonful with blue corn tortilla chips for a great afternoon pick-me-up.
1 tbsp per serving....or 3-4 😉...you decide!
